He began his career in the U.S. working for a number of notable kitchens before returning to his hometown, Hong Kong, to assist in opening a restaurant by the legendary Alain Ducasse. In 2014 Lai opened Neighbourhood, a seafood-centric, French-inspired restaurant that was soon brandishing a Michelin star and putting him on the path to fame.&nbsp;&nbsp;<\/p>\n\n\n\n<p>This year he made an appearance on the popular TV show Chef of China (\u4e00\u996d\u5c01\u795e), showcasing his now signature, slightly drunk, style and a couple of memorable mushroom dishes. &nbsp;<\/p>\n\n\n\n<p>Hot off this moment in the spotlight, <a href=\"https:\/\/www.heytea.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">HEYTEA<\/a> invited David Lai to recreate those flavours in beverage form.
